recipes to help you throw the best new year's eve party. welcome. andrea, great to be here in the new year. it's going to be soon. it is. happy new year early. did you get some great
presents? yes. i got to open them when i get home. i want to talk about this food because it all looks delicious. thank you. first, let's start with what are you making here?
so, new year for me is all about celebrations and we have some beautiful small bites. some elegant, some simpler. so what we're going to start off with is a potato [ indiscernible ] you need the following. why i love this recipe -- i'm
sure everyone has mashed potatoes left so this is regular mashed potatoes. take them put in the bowl like so. there you go. if you can hold that, like so, i'll put some salt. a little pepper.
we are going to put a little bit of milk here. like so. then we whisk it up. pretty easy. okay. so we're going to whisk this up. then we're going to add some
all purposes flour. ap. ap. this uses potatoes. we are going to add the flour. once you add the flour you just need to mix that in without overbeating it. just a little bit. that's it.
okay? i have one here of course. that's already prepared. we are just going to very lightly put a little bit of cooking spray. this is a griddle. a lot of people have this at home like a pancake griddle.
or you can have a teflon nonstick pan. what temperature do you usually use? this is like 300 degrees. 300 degrees. and all we are going to do is take a spoon and let it drop off the point of the spoon into
these little round -- they look like mini pancakes. that's what it is. it's a potato pancake. they probably only need a few minutes. exactly. about a couple of minutes on either side.
and we actually serve these all up and down the east coast at many events, here in new york, miami, philadelphia. how long do you cook on each side? so about a minute and a half. a minute and a half. so we are going to leave
those. then we are going to flip them over with the spatula. here we have a few that are ready. what do you put on top of them? quite simply we have a little sour cream.
then we put some caviar. how is it? hm! a little caviar. i never tried caviar. this is delicious. [ laughter ] i think it's always good. a little lemon zest.
you weren't done! i ate before you were done. you can have another one! it's delicious. caviar is a luxury. it's expensive but this is american caviar. today you can find it in pretty much any good quality
supermarket. mm-hm. in new york. what's another substitute? salmon is a great option. smoked salmon is more economical. you can use salmon caviar, salmon tartar.
now we have little crispy potato with new york state and a bernie aioli. very dishes -- bernaise aioli. very delicious. i have a strange accent. you can tell i'm not from manhattan with my accent. so i have to throw in a bit
of a british thing. these are mince pies. the holidays in england, my granny used to make these and to me they're very special. you cannot have new year's or the holidays without a mince pie. eggnog.
simple eggnog, this is spiked. you can spike it with whatever you want. and -- bourbon this one. i love the display. what are these? these are little sugar cookies.
and a straw. and then dessert. these are small cakes. quite simply, chocolate cake, chocolate ganache and a little house made marshmallow on the top. whoo. how simple is that?
so you cook all over the world? i have. you've cooked for celebrities. this is getting a bit scary! it's done. so as people are preparing because these are some great
tips, when you're entertaining what do you like to keep in mind? if you are entertaining, plan in advance. do your shopping. do your prep. ideally a day or two in advance.
so you can also enjoy the evening. enjoy the party. we almost forgot to tell you about these. this is a little more regular. this is just a beautiful tomato bisque.
house made tomato soup with grilled cheese. simple. anybody can do that. prepare in advance. it's a big thing. i think serving utensils are very important. think of the vehicles and
plates that you're going to use. get it ready because it's fun to entertain but you have to enjoy yourself too. and a little bubbly. we're out of time. thank you so much, chef. happy new year.
